Yummy Cool Cucumber Rice

Cucumber with coconut gives a good taste & in summer it is good for health ,easy to carry, easy to serve for four people
fried cashew can also be added ....****

Ingredients

4 cups baked rice

1/2 cup grated coconut

1/2 cup peeled & scrapped cucumber
1 tsp mustard seed
1/2 tsp urad dhal
1 red chilly
1 small piece of ginger -finely chopped

1 green chilly finely chopped

2 tbsp cooking oil of your choice

1 tsp coriander leaves

1 tsp curry leaves.

salt as desired

Directions

1.Spread the baked rice in a plate and allow to cool.
2.heat a pan with the oil, add mustard, urad dhal,red chilly.

3.add coconut, stir and after afew seconds add squeezed cucumber, green chilly and ginger and simmer.
4.when the cucumber is cooked and mixture starts changing the colour, Reduce flame.
5.mix this with the rice, without breaking the rice<>6.add required amount of salt
7.decorate with the leaves.

Spicy Tamarind dish**!!**!!

Spicy Tamarind Recipe** Ingredients
2 red capsicums
2 yellow capsicums
3 red onions
4 tbs sunflower oil
Tamarind paste
1/2 cup (125ml) tamarind concentrated
lemongrass stem
finely chopped garlic cloves,
roughly chopped lettuce
2 tsp grated ginger
2 long red chillies, seeds removed, sliced
1 cup coriander leaves<>1/4 cup mint leaves for the garnishing.
2 tbs honey Method:
Step 1
Preheat the oven to 190°C. Put all the ingredients with 1/4 cup (60ml) boiling water. Roast them Blend to a thin paste, then set aside.
Step 2.
Toss the vegetables in the oil, spread over a large baking tray , then roast for 30 minutes.
Remove from the oven and fry with the tamarind paste, then roast for a further 20-25 minutes until becomes tender. Serve hot or at room temperature, garnished with the extra mint leaves. You can also enjoy this with Brown rice, or Paranthas or any other dishes...
